Home Comfort Cookbook
This little black book put out around 1933 (or 1934) by the Wrought Iron Range Co. of St. Louis, Missouri is in the process of being scanned into a "pdf" for easier viewing. At least that is our intention. We have half of it scanned so far (111 pages). You can find the link for the Home Comfort Cookbook over at our Prairie Pioneer News. We did find a "Buttermilk Biscuit" recipe that we do intend to try out one of these days. I vaguely remember my Grandma Constance McGill making some of the most delicous, airy buttermilk biscuits. This recipe calls for 1/2 teaspoon of baking soda stirred into to buttermilk until it effervesces, then you proceed on to adding the flour, gradually working it into a stiff dough.
Buttermilk Biscuits Recipe...
- 2 cups flour
- 1/2 teaspoon baking powder
- 1 cup buttermilk
- 1/2 teaspoon soda
- 2 Tablespoon shortening
Sift four, salt and baking powder together into a mixing bowl, add shortening and rub it lightly into them; add soda to buttermilk and stir thoroughly until it effervesces, then add to flour, gradually working it into a stiff dough; turn onto floured board and knead lightly until smooth; roll out slightly more than a quarter-inch thick, cut out biscuits, and bake on greased pan in hot oven twelve to fifteen minutes. It did not give a temperature for the oven, but I'm assuming the Wrought Iron Ranges didn't have temperature settings like our modern day ovens. Wouldn't this recipe be great with "Chocolate Gravy" on a special weekend morning when ALL the family gathered to share memories, stories of their family heritage!
